Shy Susan (Tetratheca gunnii) is a critically endangered wildflower endemic to a tiny part of Tasmania. Her survival depends completely on a little native bee, who alone is capable of pollination. Their fate is forever entwined.’

Shy Susan Chardonnay is made in tiny quantities of only the best parcels of fruit. The philosophy of Shy Susan Chardonnay is to make the purest expression of Tasmanian Chardonnay. The wine is always a blend of vineyards as each individual site brings different characteristics, creating a complex, layered wine. Fruit is hand picked and whole bunch pressed direct to barrel. We do not use any new oak as we feel this can overwhelm the delicate fruit expression, instead a careful selection of one year old and older barrels are used to create subtle, integrated oak characters that become part of the wine. The wine is matured in barrel without sulphur for up to 12 months, with occasional stirring. Sulphur is only added just prior to emptying and blending.
