Sparkling Cider is a Methode Traditionelle sparkling apple cider: We hand pick bitter-sweet cider apples, crush and ferment the juice once in stainless steel and then again in the bottle. The cider then spends at least 18 months maturing in the bottle (on the Lees) before being hand riddled and disgorged to remove the yeast leaving a wonderfully clear cider with a rush of tiny bubbles when poured. Delicate hints of brioche with a clean, crisp dry finish and a little tannin to enliven the mouth. Bottle fermented and some natural sediment may remain. Serve chilled on any fun occasion or with a light dish such as a sushi, Camembert, a light meat or vegetarian dish.
