This beer uses a yeast that was originally banked in the 1950’s by L. Walters from the South Australian Brewing Co - which would go on to become the now demolished West End Brewery. Brought back to life by Ferveo Yeast, this strain has a very fast fermentation kinetic, high attenuation and a clean and light floral aromatic profile with fresh acidity. We thought we would put it to the test and brew a big Baltic porter! It’s complex and layered with rum and raisin, malt chocolate and berry notes.
