The addition of a small amount of such young beer to an already mature beer is referred to as "Krausen". The full flavor maturity of the stored beer is complemented by the freshness of the green beer by the frizzing. Before the invention of pressure vessels for storing beer, this historical brewing technique was the only way to bring a beer that had to be stored for a long time to its full flavor and at the same time be lively. For Aecht Schlenkerla Krausen, the Helle Schlenkerla Lager matures first in the deep tunnels under Bamberg's Stephansberg. Shortly before it is served, it is topped up with traditional Märzen smoked beer. This turns it into an amber-colored, unfiltered and tangy lager with a slight smoky taste. Tasty and full-bodied, it is the ideal refreshment for the warm season.
