We opted for Talus T90 plus Talus Cryo and Cashmere hops – uncommon choices in this beer style – to give the public a taste of their full potential. What sets this brew apart? Wheat DME, a dried malt extract, allows us to infuse more complex sugars into the beer when our mash tun reaches its limit. Talus hops, a relatively new variety from North America, come from Humulus neomexicanus, unlike the more common Humulus lupulus.
