"Loving working with this variety, seems to be a good one for our ever changing climate. Being a late ripener its good for hot years, extending the season and having super thick skins and high acid make it a growers dream for these wet years. I’m in, we give the grapes a month on skins to yield their goodness and then pack the wine into puncheons for about 14 months. Blended and like all our wine, bottled without messing around with fining and filtration."
