Made from estate grown fruit, the Silurian Late Disgorged spent 11-12 years on the lees, giving it a beautiful texture. The wine is super fresh, packed with flavours of lemon, citrus peel, a hint of buttered toast, and subtle minerality. With the perfect balance of energy and complexity, this is my all time favourite Canberra sparkling.

The 2011 vintage was unusually wet, in contrast to the drought years 2003-2010. Temperatures were lower, especially daytime temperatures, but they were only a little below long-term averages – again, the contrast is with the many warm to hot years in the last decade. Disease pressure was high, and our pickers spent far longer than usual, ensuring that only clean fruit entered the winery. Quality of these reduced yields was very high, with wonderful aromatics and natural acidity. Serve in larger-bowled glasses.
