When thinking about taking on Gewurztraminer as a variety under the Havilah label, Ricky Evans was trepidatious at first. Too often he'd seen versions of the variety that looked blown out and too overt. Subtlety is something he looks for in his wines and many Gewurztraminers are anything but subtle. However, with careful winemaking and judicious skin contact, he worked out you can tame the variety to be pretty and delicate rather than bombastic. With lovely light texture and a little grip, this is a wonderful expression of the variety.
