The genesis of this gin was back in 2015 when we distilled a little drop called Cousin Vera’s Gin. Made with our friends at Santamanía in Madrid, this was our first foray into savoury, Mediterranean-inspired gin flavours.

Cousin Vera’s Gin came and went pretty quickly, but remains a cult classic in the Four Pillars canon for those who crave that savoury style. From that moment on, we knew gin and olives would combine beautifully and a trip to the olive groves of northern Victoria confirmed it for us.

OLIVES, OLIVES, OLIVES

After visiting Cobram Estate during olive harvest in 2019 we realised olive oil could be a brilliant botanical alongside olive leaf.

“The aroma, flavour and texture of fresh olive is stunning, and we did an entire year of trials before finalising the recipe for this gin.

These trials landed us on our final mix of Olive Leaf Gin botanicals: a big base of juniper with a savoury overlay of coriander seed, rosemary and bay leaf from my backyard, olive leaf, olive oil, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit.”

The result is a gin that is savoury, textural, bright and perfect for any Martini. But make sure to try it in a Gibson, Cam’s favourite. Stir 60mL gin, 10mL dry vermouth and 10mL dry sherry over ice, strain into a super cold glass and garnish with a couple of cocktail onions.

Five years on from that trip to Spain, we’re pumped to finally share Olive Leaf Gin with the world."
