The grapes are sourced from the Tumblong vineyard in the Gundagai region which has established an enviable reputation for Italian varietals including Nero d'Avola. This wine has intense dry herbs and raspberry aromas and flavours followed by a savoury finish. The grapes were all de-stemmed and fermented whole berries in an open fermenter then lightly pressed at the end of fermentation directly into 10% new and 90% old French oak barriques. The wine was matured in oak until filtration and bottling in July 2023. No fining.
