"By definition, Pétillant Naturel is alive… a ferment before your very eyes… a tiny winery in a bottle.
When we’re lucky and the vintage permits – as it has in 2019 – we’re blessed with a silty golden layer of Chardonnay lees that bubbles to the surface like a lava lamp. Once you’ve finished marvelling at the visual spectacle you can lose yourself in aromas of brioche, lemon curd and heady citrus blossom. Intensely fresh. If lemon blossom can also be a flavour, this is where you’ll find it, accompanying toffee apples and toasted cashews.
All sparkly on the palate with a bead so tight you could mistake it for strings of tiny pearls. Textured and weighty but lilting and floral. You’ll be forgiven if you don’t wait until the summer sun to crack this one.
100% Basket Range Chardonnay. Whole-bunch pressed to concrete ‘egg’ fermenter. Fermented until nearly dry."
