Made in a Pét-Nat style but with an uncommon grape, originally as part of a collaboration with our friends in Japan at KP Orchard and Lyndon Kubis of Toorak Cellars, Oishi has found its forever home on our list. Pinot Gris gives a new expression to sparkling wine, imparting distinctive prettiness.
The nose is gunflint and apple blossoms; the palate crisp, waxy, just-ripe pears with an enticing softness to the acid structure. A pure springtime stroll with all of the lightness and dappled beauty of the season.
100% Basket Range fruit. Whole-bunch pressed to concrete ‘egg’ fermenter. Fermented until nearly dry.
