The 2016 vintage is aged on lees for 5 years and is comprised of 66% Pinot Noir and 34% Chardonnay sourced from 100% Grand Cru vineyards. 25% of the wine is matured in oak barrels and is bottled at 1.9g/L dosage.
A buoyant lacy mousse is underpinned by a pale straw to straw coloured base that has gold tinged edges and has a steady stream of nimble bubbles coursing through it. Classically finessed Billecart-Salmon aromatics of yeast lees, baked bread and brioche stream out of the glass followed by hints of cashew, citrus and oily toast like notes.
Refined and sculptured by invigorating acidity, the mouth watering palate features yeast lees, citrus and baked bread flavours over delicate cashew and oily toast like characters. Finishes long and dry. Drink over the next 6-8 years.
