For this specific raspberry we used summer raspberries. We kept the maceration short to allow the fruitiness, fruit acids and soft lambic to merge nicely. The lambics used come from 3 different barrels and 5 different brews, two from Lindemans (80%) and three from us (20%).
3 Fonteinen Raspberry is obtained by maceration of hand-picked raspberries on young traditional lambic, in a ratio of one kilo raspberries per liter of traditional lambic. Then the fruit lambic is assembled with young lambic and everything is bottled, and the fermentation continues in the bottle. The result is a distinctly fruity raspberry lambic beer, with an intense forest fruit bouquet and with evolution in the glass. Natural fruit, without the addition of juices, syrups or sugars. Unfiltered and unpasteurized.
