Jonny Hughes pulls out all the tricks on his version of the variety. Some of the fruit is fermented on skins, some is fermented in barrel, some just sent to tank. Finally, after the ferments are complete, the whole lot hangs out on lees before being bottled. What you get is a lush, textural style of Pinot Gris with a very slight blush to the colour.
