We were thrilled to collaborate with the Fox Friday crew on a WCIPA that showcases our collective pride in brewing. Our goal was to create the palest possible body using just base, chit, and wheat malt. For a little extra magic, we layered the hops with Simcoe, Strata, and Idaho 7 T90 pellets early on, then bombarded the dry hops with the same three varieties. We also added a twist with advanced pellets – Cryohops and CGX – to really amplify the aromatics. Combining all of these elements results in an IPA that is right at the forefront of the evolution of this style. The malt base is kept light to let the hops take centre stage, and the use of lager yeast instead of ale yeast ensures a crisp refreshing finish. Enjoy this WCIPAs bold flavour and captivating aromas, a testament to the pride and craftsmanship we put into every batch.
