Tasting Notes: A lively and complex nose of wild strawberries, blood plum, fennel and nutmeg baking spices. The palate pops with bright red fruits of strawberry and cherry, white mushroom and a little ginger. Freshness of fine acid and gentle tannin carry those red fruits long and true.
Winemaking Notes: Wild Yeast fermented entirely as whole berry, short cold soak, minimal plunging, on skins for 12 days. Pressed to French oak (10% new) for indigenous malolactic conversion, then sulphured on lees. 10 months in oak, then racked twice prior to bottling.
