Fermentation of white grapes on skins is an ancient method which acts as a natural preservative. Still relevant in today’s winemaking, it produces a very structured and expressive dry white wine. Slowly fermented on skins, the Viognier will match robust flavours a subtle “slow wine” that shows the perfect balance between fruit and minerality.
