Asterix is our take on a Belgian style blonde, albeit aged in a used French oak barrel. We added Brettanomyces Bruxellensis for barnyard funk, and a young culture of Pediococcus Damnosus to provide a delicate acidity. Simple yet complex was our aim. One malt, a small charge of Saaz hops, and a Trappist ale yeast for primary fermentation. A delicious Brettanomyces barnyard funk aroma, the ester profile working in harmony with the barrel character. On the palate, a gentle acidity complements the oak and malt character. Delicate, but bold.
